Remember the brownies of your youth? Box mix, a few added ingredients, popped it in the oven and it magically transformed into oozy chocolate deliciousness you could happily drown your taste-buds in forever? Yep, they were damn good; super moist in the middle and chewy on the outside. Well, this is it, without having to go out and buy box mix! And also with rum, because we're grown-ups now.
Ingredients:
1/2 cup oil or melted butter (or some mixture of both)
1 cup sugar
1 tsp vanilla
2-3 tablespoons rum
2 eggs (room temperature)
1/2 cup all-purpose flour
1/3 cup cocoa powder
1/4 tsp salt
1/4 tsp baking powder
1/2 cup bitter/semi-sweet chocolate chip cookies
To Make:
about 5 mins
-Mix all dry ingredients besides sugar. If feeling particularly generous sift mixture.
-Heat oil slightly in microwave (30 sec - 1 min). If using butter, heat in microwave until completely melted.
-Mix oil/melted butter with the sugar until well combined (the warmth helps dissolve the sugar, but make sure it is not overheated.)
-Add vanilla and rum, and eggs (one at a time, mixing in between to incorporate better.)
-Mix in the dry ingredients, stirring slowly. The batter will become very sticky and thicken up quite a bit, though still remaining runny.
-Finally, mix in chocolate chips, and pour batter into 9-inch cake pan or square brownie pan (non-stick or greased up a bit beforehand.) It will spread out quite thinly.
To Bake:
25 mins
-Preheat oven to 350F. Bake for 20-25 mins, until brownie has a crust on the top and begins pulling away from the sides. Let cool and enjoy!
